Recipe: Cake in a Cup

This is most definitely from the "I can't believe this actually works" file.  My cousin James called and told my mother about this recipe and she promptly passed it on to me.

Cake in a Cup


Ingredients:
  • 1 box angel food cake mix
  • 1 box any other kind of cake mix

The dark chocolate mix was on sale so I got that.

Directions:
  1. Empty both cake mixes into a large zip top bag, seal, and shake until well mixed. 
  2. Put 1/3 cup of mix in a large mug.  (Seal the bag and save the rest for later.)
  3. Add 3 Tablespoons water. 
  4. Mix.
  5. Microwave for 30 seconds (tall, big mug) or 60 seconds (wide, big mug).  
  6. Enjoy!
*Update: Try mixing in a tablespoon of chopped up dark chocolate into the batter before microwaving.  It creates little lava cake like bites.  You're welcome.*

I know this sounds crazy but it totally works.  In 30-60 seconds you will have cake in a cup.  The bonus is that since half of it is angel food cake, it is low in fat.  This also completely justifies the addition of dark chocolate bits and whipped cream, right?

  3. I tried it with angel food and devils food cake mixes and it turned out good. Next time i'll butter the mug first or spray it with Pam cuz it was a bugger to wash the cup afterwards.

  4. I'm a bit late to finding this but thought I'd share a change I made which I feel improves the texture. It only works with chocolate though. I added 1+1/3 cups cocoa powder to the large bag because it improves the cakey texture. Otherwise, it's more like an angelfood texture, which is fine but when I'm craving cake - I'm craving that crumbly cakey texture. It also amps up the chocolate flavor that got lost when the vanilla angel food got mixed in.

  6. Because of my never ending craving for chocolate, I used dark chocolate fudge with the angel cake and added a couple Tbsp of semi-sweet mini choco chips. Worked perfect and had some nice creamy dark choco in the middle. Also tried some with marshmallows and also tried peanut butter. Seems you are only limited by your imagination. I am going to decorate a few mugs with mix in them and leave them as treats for friends and co-workers.
